Total Phenolic and Total Flavonoid Content, Antioxidant Activity, and Nutritional Profile of Ziziphus mauritiana Fruit Juice

Ziziphus mauritiana is a plant species belonging to the Rhamnaceae family. It commonly found in tropical and subtropical regions of Asia, Indonesia, this grows wild thrives on islands Bali, Lombok Sumbawa. The fruits Z. are edible, however, it underutilized has very low economic value. To evaluate its possibility be developed as functional food, study was conducted determine total phenolics flavonoids, dietary fiber, nutrients contained fruit juice mauritiana. Total phenols flavonoids contents were determined using Folin Ciocalteu AlCl3 methods, respectively. vitro antioxidant activity evaluated DPPH method. content soluble insoluble fiber standard AOAC analysis method, proximates accordance with SNI 01-2891-1992. results revealed that freeze-dried 1690 mg GAE/100g, 15.10 QE/100g, 0.61%, 2.03%. However, weak IC50 328.54 ppm. proximate crude 0.56%, carbohydrates 82.43%, protein 3.34%, fats 0.31%, ash 3.62%, water 10.30%. In conclusion, high phenolic substances, nutritional value, therefore good potential food.
